Cannubi by Umberto Bombana, the contemporary Italian restaurant at Dusit Thani Bangkok, has been awarded its first MICHELIN Star in the MICHELIN Guide Thailand 2026, recognising its “high quality cooking” and elevating it into the city’s most coveted culinary circle.

Cannubi stands out as one of the guide’s new Italian entries, joining a small group of European restaurants that have earned stars in Bangkok.
A MICHELIN one-star rating signals “high quality cooking, worth a stop”, a concise definition that masks years of quiet, relentless work in the kitchen and dining room: consistency, ingredient obsession, and a clear, confident culinary identity.

Piedmont Meets Bangkok
Named after the renowned Cannubi hill in Barolo, one of Italy’s most historic and prestigious vineyards, Cannubi by Umberto Bombana brings a slice of Piemonte to the heart of Bangkok.
Located on the lower floor of Dusit Thani Bangkok on Rama IV Road, the restaurant is an elegant, softly lit space that looks out onto the hotel’s cascading waterfall, a calming backdrop that feels worlds away from the city’s traffic outside.
The concept was created by Chef Umberto Bombana, the legendary Italian chef behind Hong Kong’s three-MICHELIN-starred 8½ Otto e Mezzo Bombana and often nicknamed the “King of White Truffles.”
Day-to-day, the kitchen is led by Executive Chef Andrea Susto, whose background in both food science and sommelier training informs a style of cooking that is technical yet warm, refined yet generous. The menu celebrates seasonal Italian ingredients, from handmade pastas to pristine seafood and carefully sourced meats, presented through concise lunch menus and more elaborate dinner tasting journeys.
MICHELIN inspectors highlight how the team “marries classical roots with modern technique” in dishes that are confident and well-balanced, a fusion of tradition and contemporary finesse that sits at the heart of Cannubi’s identity.

An Enoteca at Heart: 350 Labels of Terroir
Cannubi is more than a restaurant; it is also a sophisticated enoteca, named for one of Italy’s greatest crus and designed for guests who care deeply about wine.
The cellar holds around 350 labels, overseen by a knowledgeable sommelier team who guide guests through Italian classics and global icons alike, with thoughtful pairings that bring out the nuances of each course.
